No stranger to the catering landscape of South Carolina, Corley Mill House & Garden has remained at the top of the list of premier wedding and event venues in the south east for the last 15 years. While we certainly have enjoyed watching the restaurant industry in Columbia evolve and mature over the years we noticed that the catering & event scene seemed a bit stagnate in comparison. Just the same old caterers with the same old shrimp and grits and vegetable trays. We noticed our own in-house catering program also seemed a little ripe for innovation. We realized that South Carolina didn’t need another catering company… it needed a different kind of catering company. So we stepped outside of the box and asked ourselves what elements would we need to add or change in our company in order to take on this new role. A surprisingly simple list followed and we got busy. What began as a seemingly natural expansion of our company ended as a complete overhaul of our culinary and event design programs. After nearly a year of hard but gratifying work we are now thrilled to extend our services to the world of off premise catering.
We have built a new state-of-the-art kitchen, complete with loading bay, Smoking pit and even a miniature research and development test kitchen. We have tirelessly sought out and tested the newest technology in food transportation assuring the highest quality while adhering to the stringent requirements of food safety. We have reached out to local farmers and vendors in order to procure the highest quality and most responsible ingredients. We have also brought chef Scott Hall aboard as our new executive chef and partner.
Chef Scott returns to South Carolina after 14 years of culinary education & exploration as well as a successful career in catering & event planning in New York City. Having worked in the catering and restaurant industry for nearly all of his professional life Scott was thrilled when the opportunity arose for him to create, open and manage a catering company with his mentor, restaurateur Craig Skiptunis, in uptown Manhattan. Flavor Catering was born and quickly found success as a design oriented catering company with a dedication to value, high quality ingredients and most importantly innovation. Chef Scott brings to Corley Mill Catering the same devotion to innovation that made Flavor stand out in a city served by arguably the best caterers in the world.

In order to assure a fresh and customized approach to our clients events, our team of chefs and designers are encouraged to stay abreast with the latest trends in food and event production. When not preparing for an event our kitchen staff stays busy testing new ideas, recipes and techniques. Because of this dedication to always remain at the forefront of our industry, we avoid the cookie cutter, pick-one-item-from-each-column style menus and proposals so frequently used by caterers. We strive to capture the individuality of every client and every event regardless to size or budget.
Although we love the opportunity to push the limits of our clients and their guests imaginations and expectations we are just as at home in the rich culinary traditions of the south. One of our specialties is South Carolina BBQ. Although there is no shortage of caterers providing barbeque in South Carolina we bring an attention to detail as well as respect for the art form that sets our BBQ apart. Every sauce and stock is made from scratch on site. Every ingredient is of the highest possible quality. Our pork shoulders are lovingly brined in sea salt, molasses and bourbon and our hickory is from trees grown just down the street. We even cure our own bacon! Why this attention to detail? Because that is just the thing that we were missing.
